with Sweet Potato Fries & Homemade Remoulade

Catfish Po'Boy

Ingredients

7-9 oz. Catfish Fillet
2 Tbsp. Parsley Minced
2 Large Leaves Romaine
1 6x6 Tomato
8-10 oz. Sweet Potato
¼ C. Buttermilk
(2) 6-inch Hoagie Rolls
1 tsp. Honey
¼ C. Cornmeal
1 Tbsp. Cajun Seasoning
Dressing:
2 Tbsp. Dijon Mustard
2 Tbsp. Sweet Pickle Relish
¼ C. Mayo
Spice Mix:
1 tsp. Garlic Granulated
1 tsp. Paprika

Instructions

Prepare Your Ingredients
Preheat oven to 450°F.
Quarter the sweet potato, thinly slice into fries and place on a foil lined baking sheet/pan.
Thinly slice the tomato.
Roughly chop the lettuce.
Mince the parsley to make about 2 Tbsp and add to the dressing container.
Pat the catfish dry and then cut into 1" chunks.

Bake the Sweet Potato Fries
Toss potatoes with 1-2 Tbsp. olive oil, the spice mix, and salt and pepper to taste.
Mix until evenly coated.
Cook 12 minutes, flip, then cook an additional 12 minutes.

Fry the Catfish
Pour the buttermilk into a medium bowl.
Add the catfish pieces to the buttermilk and then place in the bag with the cornmeal leaving behind the excess buttermilk.
Add desired cajun seasoning to the bag and shake until the fish is completely coated in the mixture.
Heat 2 Tbsp. oil in a large pan over medium heat until hot.
Add catfish to the pan, shaking off any excess cornmeal.
Cook until golden brown and cooked through ; 4-5 minutes per side, until cooked through (add oil if pan dries).

Make the Remoulade
Add ½ the honey to the container with the dressing, stir to combine, and season with salt and pepper to taste.

Plating
Heat the hoagie rolls in the oven for a few minutes to toast.
Spread the remoulade on both sides of the rolls.
Layer on lettuce and tomato, then top with catfish pieces.
Set the sweet potato fries on the side.

Pat dry. Cut into bite sized pieces, season with salt and pepper and follow recipe instructions. (optional) after sautéing you may bake at 375° for 15 minutes.

Vegan Fish
Heat your toaster oven 425° F for 10 minutes per side. Season with cajun if desired, then cut into bite sized pieces. Follow recipe instructions.
