Creamy Tortellini Soup

Ingredients

1 Italian Sausage
2 oz. Spinach
2 T. Basil
1 C. Diced Yellow Onion
2 Garlic Cloves
Red Pepper Flakes
2 T. Flour
1 C. Chicken Broth
7 oz. Diced Tomatoes
1 T. Tomato Paste
4 oz. Cheese Tortellini
¼ C. Parmesan
1/4 C. Heavy Cream
1 T. Unsalted Butter

Instructions

Prepare Your Ingredients
Wash and dry your produce.
Roughly chop the basil to make about 2 Tbsp.
Mince 2 garlic cloves.
Roughly chop the spinach.
Remove the casing from the sausage.

Cook the Sausage, Onions & Garlic
Place sausage in a medium pot over medium heat.
Cook, crumbling meat with a wooden spoon until browned and cooked through.
Set aside on a paper towel covered plate to drain fat.
Wipe out the pot, melt the butter and ½ Tbsp. olive oil over medium heat.
Add the onion and cook until tender, about 5-7 minutes.
Add the garlic and red pepper flakes to taste, and cook until fragrant, about a minute.
Add the flour and cook for another minute.

Make the Soup
Add the broth, ¾ cup water, diced tomatoes (with juices), tomato paste, sausage, and tortellini to the pot.
Bring to a boil, then reduce heat and simmer stirring occasionally until the tortellini is tender; 8-10 minutes.
When the tortellini is tender and cooked, add the parmesan cheese, allowing it to melt.
Stir in the spinach and let it wilt, then add the cream.
Season with salt and pepper to taste and remove from heat.

Plating
Divide the soup evenly between your bowls and top with the chopped basil. Enjoy!
