Spiced Fish Tacos

Ingredients

10 oz. Tilapia
1 Garlic Clove
1 T. Fresh Cilantro
1 Avocado
1 Mango
1 Green Onion
1/4 Red Onion, Minced
1 Lime
1/2 Jalapeno Pepper
1/8 t. Ground Cayenne Pepper
6 (6-inch) Flour Tortillas
Spice Mix:
½ t. Dried Oregano
½ t. Chili Powder
½ t. Coriander
¼ t. Ground Cumin

Instructions

Prepare Your Ingredients
Wash and dry your produce.
Preheat oven or toaster oven to 350° F.
Thinly slice the green onion, and add to the bowl.
Mince the red onion and 1 garlic clove and add to the bowl.
Finely chop the cilantro to make about 1 Tbsp, add to bowl.
Small dice the mango and the avocado, then add both to the bowl.
Deseed and mince ½ the jalapeño pepper, add to bowl (leave seeds or use more for spicier).

Prepare Mango-Avocado Salsa
Squeeze the juice of 1 lime into the bowl with the veggies, and sprinkle in cayenne pepper.
Add salt to taste, mix, and place in the fridge.

Cook the Fish
Pat fish dry, season with salt, and rub in the spice mix on both sides.
Heat 1 Tbsp. olive oil in a large pan over medium-high heat.
Add fish and cook 2 minutes on each side or until cooked through and flakey when probed with a fork.
Remove from heat and break fillets into pieces using forks.

Warm the Tortillas
Add the foil wrapped tortillas to the oven to warm for 3-5 minutes.

Plating
Divide the fish evenly among your tortillas.
Top each tortilla with desired salsa.
Fold tortillas in half. Enjoy!

Pat dry, season with salt and spice mix. Heat 1/2 Tbsp. olive oil over medium heat and cook 1-2 minutes per side tossing frequently until cooked through. Follow recipe


Vegan Fish
Toaster oven 425 F 10 minutes per side.

Jackfruit
Drain, rinse, and break apart into small pieces. Season with salt and spice mix. Heat a little oil in a pan and cook for 4-5 minutes over medium-high heat.
